And when we talk about festivities we talk about gifting and treats. Living in a country like ours, sweets are the perfect treat for celebrations.
What we see as a common practice or a protocol during the festive seasons is gifting those regular sweets from your nearest Bengali Sweets or buying a box of Cadbury’s which is quite a passé. Coming straight from our master chef, we present to you recipes of making Cup Cakes easy and quick. Let’s begin with something that is very easy and yet a delight especially for kids in your family.
QUICK CHOCOLATE CUP CAKE RECIPE: This super speedy cupcake recipe is perfect for when you’re in a hurry. Pop them in the oven and you’ll have a yummy treat that’s ready to be served in just 20 minutes
- 100g butter
- 2/3 cup (195g) caster sugar
- 1 tsp vanilla essence
- 2 eggs, lightly beaten
- 1 cup (150g) self-raising flour
- 1/3 cup cocoa, sifted
- 1/2 teaspoon bicarbonate soda
- 1/2 cup (125ml) milk
Chocolate butter cream frosting
- 1/4 cup (60g) unsalted butter, softened
- 1 1/4 cups (195g) icing sugar, sifted
- 1 tbsp cocoa, sifted
- 1 tbsp milk
Preheat oven to 180°C (160°C fan-forced). Line cupcake tins with cases.
Using a mixer, cream butter, sugar and vanilla until creamy and fluffy. Gradually add eggs and mix until just combined.
Combine flour, cocoa and bicarbonate soda. Add to creamed mixture with milk. Beat until just combined.
Spoon mixture into liners until each case is one-third full. Bake for 15-20 minutes.
To make the chocolate butter cream:
Beat butter until light and fluffy. Add icing sugar and cocoa and combine well. Beat in milk until mixture is fluffy.
Cup cakes can be the perfect sweet for this season. You can make a variety of cup cakes depending on your taste and the guests that you want to cater to. They are extremely handy and easy to eat and distribute as well. Also, making cup cakes will definitely make you popular amongst children. 🙂
Now, If you want to try your hands on something which is a tad more detailed, we have something for you that can be made with ease but requires some precise baking while you are making these cup cakes.
BANANA CUPCAKES WITH HONEY CREAM RECIPE:
- 1 ½ cups plain flour
- 3/4 cup white sugar
- 1 tsp baking powder
- 1/2 tsp bicarb of soda
- 1/4 tsp salt
- 125g butter, melted
- 2 eggs
- 1 ½ cups mashed bananas ( approx. 4 medium bananas)
- ½ tsp vanilla extract
- 125g butter, at room temperature
- 1 tbsp honey
- 1 1/4 cup pure icing sugar
Preheat oven to 180°C (fan forced).
In a medium sized mixing bowl, add flour, sugar, baking powder, bicarb soda and salt and with a fork, mix together until all combined, create a well in the centre.
Add the melted butter, eggs, banana and vanilla essence.
Stir through with fork until well combined.
Fill muffin pans with your cupcake papers, then spoon in the mixture until it reaches approx the half full.
Place in oven for 12-18 minutes until golden brown on top. Leave to cool.
To make the frosting, mix all ingredients together for about 5 minutes with an electric mixer, until they become silky and pale. Fill a ziplock bag with a corner cut off – or if you wish to ice freehand with a knife – and cover the cupcake with a swirl of honey cream.
